Actually, I believe the hands were removed to make it more difficult to identify the body and make him a martyr in the cause of world socialism. Actually, it was only a few years ago that his body was officially interred in Cuba.

Che's hands were cut off to provide proof that he was actually dead; under the supervision of CIA agent Gustavo Villoldo, his body was then secretly buried by at a desolate airstrip at Villagrande where it was only discovered in June 1997. They fingerprinted the hands back at the police lab and they were a match.
