I have a 1 yr old and she might not have the time or energy to go to the spa. Its easier when things are within your reach during endless sleepness nights: Here are some great Holiday and Christmas gift ideas:

1. Since her pre-body won't be returning for a while she'll probably spend lots of time in cozy pjs: http://shopping.yahoo.com/b:Fashions%20for%20Women:784712900

Get her something pampering, like a gift certificate for a pedicure or a facial. If that seems impractical, something like a very nice robe so she's comfortable when she's up in the middle of the night with the baby. .
The WORST Christmas gift I ever got was from my sister-in-law when my older son was 6 weeks old. She gave me a reading light so I could read in bed. New moms have very little time in bed, and when they're there, they need to sleep! You can't even keep your eyes open enough to read anything. :-)

You could get her a 'Baby's First Christmas' ornament for her Christmas Tree. These ornaments usually have the year on them so she will be able to keep it for years and pass it on to her child. Some other good ideas are gifts that pamper the new mom like lotions, manicure/pedicure items, a gift certificate to a spa or for a massage, or gift certificate to a salon.

A spa gift certificate
or make a basket with all kinds of pampering items like loofahs, foot scruber and lots of creams and lotions, maybe small gift certificates to a candy store or Bath and Body Works type stores, some fuzzy slippers, a good book or a romantic DVD, some junk food, etc....
Maybe a comfy bathrobe for when she is up for midnight feedings.

make her a gift basket with stuff like lotions and bath things, perfumes, candles, books...stuff to help her relax. the spa gift card would be nice, but its expensive and with a new baby she might not have time to get out or even want to leave the baby for the day. I like the basket idea

Trip to a day spa.
She'll be exhausted after the baby and I think a trip to a spa would be just the thing to relax her afterwards.
EDIT
Plus, if you live in a cold part of the country, all the saunas and such will feel all the better.

Excellent idea. I think you should treat her to a spa day, while you babysit :) That would be nice for her to go out for a few hours and maybe get a pedicure or a massage, and know that a trusted person is taking care so she can relax for a little bit!
