Math is a short form for Mathematics.
Mathematics is an exact, absolute science. Its official short form is "Math", I believe Maths is a typographical error.
All other answers are good but for one. If we were to combine all of them and try to come up with single definition, we will not be able to cover it all and do proper deserved justice. We will always leave out some thing.
What is it?
It encompasses various disciplines.
To name a few for the start:
Arithmetic.
Geometry.
Trigonometry.
Algebra.
..........
....
..
It compliments other scientific and liberal arts disciplines. Such as Philosophy and Psychology to Physics and Chemistry....
Without its use in many other disciplines, the advances achieved in those discipline would have been far less and few.
It is used in all aspects of our life, from cradle to grave. Even a child knows the difference between just one candy and wants the other.
You may say world revolves around its use and its use encompasses the universe.

Mathematics is mainly about patterns.
You start out on an easy pattern; 1,2,3,4 etc. Then once you have the pattern down pat, you start doing more complicated things, like 4x5, which is just a different way of moving through the pattern.
Then you move onto algebra, which brings in it's own patterns, and then rely on you being able to use the easier patterns well. x+5=10, is easy to work out, x^4-32/x+23^x=ln(x) is more challenging, but all you have to do is to follow the same pattern.
Once you have the patterns of algebra worked out, you can apply them anywhere, statistics, calculus, geometry, trigonometry, codes, engineering, the list goes on...
Every type of mathematics you see will have it's own patterns, but all are built from the basic pattern you learned when you were 4. Get down with the patterns, and you'll be set.

Mathematics is the study of abstraction. Mathematicians consider certain things, such as symmetry, and derive simple axioms- basic assumptions, that you need to make these things work. They then expand a theory from this basic starting point. By dealing in a very abstract way, the results obtained can be applied to a surprising variety of things.
