Now this is the real deal.......not some fly-by-night encounter so something creative, thoughtful and meaningful is definitely what I'm looking for here.
Budget probably stretches to about £300 as it's her birthday on 23rd too and I'm separating the two events and already have her birthday treats lined up.
Any suggestions?

A Christmas candle (or just a red or green candle will do), a necklace egraved with I love you and your initials, poinsetta bouquet, and you with mistle toe around your neck.
When she sees you hold the mistle toe up, she would have to give you a kiss, then give her the poinsetta bouqet and tell her that christmas flowers are the not as pretty compared to her. Light the candle, tell her that she is the light of your heart and then give her the necklace.
I really think she will like that.

I like the necklace idea, but if you get her one, make sure it's not in a ring size box! That happened to a friend of mine, and she thought he was proposing!
Make a cd of songs that remind you of events of the past 7 months with her. My boyfriend did this for me at 6 months, and I love it! I still listen to it months later.
Whatever it is, make it personal, make it something that can go with her wherever she goes so she has a constant reminder of you!

A ticket for her and her choice of companion to a lovely resort in the South Seas. Otherwise a seedy motel room that charges by the hour and requires you to bring your own bedding to be safe.

get her something that she would use or wear every single day. That way when she uses it she will always think of you. Try jewelry, purse, a picture of you in a frame inside a purse.
