Personally, I don't think there is one most important element.

Hydrogen - the "starstuff" that eventually created us
Oxygen - we need it to breathe (forms water with hydrogen)
Carbon - we are carbon-based
Nitrogen - major component of air, we can't breathe pure oxygen

etc...

I think it's hydrogen!

If there was no hydrogen, there'd be no acids and bases, because there wouldn't be H+ and OH-. Then there'd be no pH, because without hydrogen there wouldn't be power of hydrogen (HYDROGEN IS POWERFUL)!

Without hydrogen, organic chemistry would be nothing too! I mean, what is a HYDROcarbon without the HYDRO! :D
