Party Potatoes
1 1/2 frozen hash brown potatoes, southern style diced
1 10 3/4 oz. can condensed cream of celery soup
1 10 3/4 oz. can cream of potato soup
3/4 cup milk
1 pint sour cream
grated onion to taste (I never add this)
grated Parmesan cheese and butter for topping
Preheat oven to 350 degrees. Mix all ingredients except cheese and butter, pour into shallow baking dish. top generously with cheese and dot with bits of butter.
Bake for 45 to 60 minutes or until bubbly and cheese is lightly brown. Can add 1 cup cheddar to potato mix and use buttered bread crumbs for topping. Tip: I defrost the potatoes in the microwave for just a few minutes before cooking. I had a hard time getting the potatoes to cook all the way through in time. Happy Thanksgiving!

Oh I have such a good one that I have always loved. My mom makes this all the time.
Its sweet potatoes with mini marshmellows.
Just mash sweet potatoes ( about 3) until mushy (like baby food) Mix in some cinnamon and nutmeg and spread out in glass baking dish. Sprinkle mini marshmellows over potatoe mixture and place in oven and cook until hot (maybe 10-15 mins).

My favorite side dish aside from sweet potatoes with marshmallows is greens beans with bacon and onions. Basically, you fry finely chopped bacon (drain), add some finely chopped onions, then add French cut style green beans (frozen will need to be defrosted and drained or fresh) and fry until crisp. Yum!
You can also substitute the regular mashed potatoes and gravy with a mashed potato bar. Picture a baked potato bar with all the fixings (chives, sour cream, bacon bits, pesto, salsa, etc.) and just substitute with mashed potatoes. It adds a twist to the tradition of mashed potatoes, but, with healthy alternatives to just gravy. My sister has served this at parties and it's a hit.

make a dish of rice with some wild brown rice in it, after all the indians had brown rice, and use a can of mushroom soup in it to flavor the rice nicely, you can also add some dried onions, parsley and some diced celery if you like, also you could get a couple cans of whole berry cranberry sauce, and a package of frozen red raspberries, then make a large package of raspberry jello and mix in the cranberries and raspberries, a great treat for everyone.

Mini Weiners in a tart barbeque sauce. Heat up the sauce in a crock pot, adding the weiners after boiling or frying them. Be careful, turn them often if frying, they burn easily. If your on a tight budget, put fried beef liver cut up into bite sized pieces in the sauce, it will be a well hit offering either way.
