They flew all the time.What about all those times Obi said he hated flying...or was it flying with Anakin?
Also during the battle 'tween Yoda and Palpatine-I saw Yoda fly across the room like a green nerf-ball after Palp belted him.
Seems like I remember a Jedi flying around like a superhero on that cartoon by the Samurai Jack Guy...seriously,though

Good questions. Since a Jedi has the power to levitate objects, it would only seem logical that he should be able to levitate himself. It could be that he can, but the concentration required to maintain the levitation would leave him vulnerable to attack. This could allow him to fall from great heights without accelerating to a speed that would allow death from deceleration trauma.
The other option is the miracle exemption clause that comes with every frictional character that demonstrates super powers of some kind. The fine print of the miracle exemption clause could be the source of the controlling force can use the powers on itself without disrupting the control of the force.
That is just a way of saying your guess is as good as mine.
