I am not sure that 'traditional' dance exists anywhere. I think that you are referring to folk dance and folk dance is not static. There may be elements that can be traced back many centuries, but the choreography has certainly changed. A Kozak dance that my group performs has roots in the 15th century, but the choreography is modern. There are many types of folk dance. Have a look at dance.net for a sample.

There are dozens of Ukrainian folk dance groups in Canada, US, and Australia. Many of the groups have websites. Have a look at the Wiki article for a global overview. Two of the key dances are the Privit (welcome) dance and the Hopak (to jump). The Privit traditionally includes presentation of bread, salt and wheat as symbols of hospitality. The Hopak, considered the jewel of Ukrainian dance, is a fast dance showcasing acrobatic solos. Originally all the solos were performed by men to impress the women, but in modern versions women also have solo parts (mainly spins).
