I am half Puerto Rican so it would like a nice and sweet nickname to give her. I would like it to be unique just like she is. :)

Terms that refer to physical beauty would work, such as 'bonita', 'belleza', 'linda', or 'florecita'--florecita refers more to a beautiful flower. All of these would be especially cute if shortened to 2 or fewer syllables, such as 'belle' or 'cita'.

You could also take something (an object, concept, place, etc.) that you know she loves and translate it to Spanish. If it doesn't sound too romantic, adding "ita" to the end of names or adjectives is a unfailing way to go.

This might sound dumb, but if her name isn't Spanish already, you can pronounce it in Spanish to make it sound exotic while still knowing that it's uniquely her name, not a Spanish term that already existed. I guess it really just depends on the name, because some American names sound a lot better than others when pronounced in Spanish.
