Ok, I want to know if say, someone wrote a diary, journal, whatever, put it in, say a hiding place in their house and nobody found it for say, 100+ years.
Would it still be possible to read it and touch it?
And it not fall apart?

I would think it would be intact as long as it wasn't exposed to any extreme temperatures or too much moisture. Also, too much light and oxygen can contribute to the disintegration of the paper, so a dark, airtight space would be best for storage. See the link below for a much more detailed answer. Good luck with your story!

If it was in a dry spot, not subject to bugs and rats, probably yes. Most libraries have books 100 years old, and they're still perfectly readable. Books start to crumble after about 150 years (that is, normal books exposed to normal conditions) -- yet there are still many books around much older than that. So the same would be true, very likely, of a handwritten document like a journal.

As the light cast a shadow across the staircase I noticed a small cutout space behind the wall. As I removed the loose board I found it, the diary that was described in the letters from my mother. It was resting on a small dusty shelf waiting silently for it's author to pick it up again. I held my breath as I removed it, only to sigh when I found it to be exactly as it had been when it was hidden there 100 years before. What secrets, what predictions would it hold that I would be able to verify all these years later.

Sure, books that are over a thousand years old can be read.
I have reference books from the 1790s on my shelf and I can still read them.....although carefully

As well, most paper today would be far more resistant to time and the elements than paper of the past, so 100 years would still be well within the lifetime of a book.
