It should be on the smaller to medium size and should be able to catapult a golf ball. It should be able to catapult about 10 feet, i believe.

My daughter had to build a catapult for her geometry class. We used PVC pipe and large rubber bands (for tension). It's pretty inexpensive and was easy to put together. By the way, her catapult shot much further than the elaborate ones that kids brought in. I think it shot a tennis ball about 70 feet.

Both a catapult and a trebuchet only have 1 moving part which make them easy to build. If you are looking for which is the absolute easiest I would build the trebuchet. It works just like a see-saw. You can build one out of a few pieces of wood, a piece of string, a piece of cloth and a rock. In medieval times the trebuchet was very popular because it was easy to build.
There are many tutorials on the web on how to build a trebuchet I recommend you use the "How to build a trebuchet" as a yahoo search term.

A fork twig, a rubber sheet (tape-shaped), that's it!
These are the items needed.
