HP Computers come with preinstalled drivers for a lot of printers. If you are using a HP Computer then you may go ahead and remove them all and it won't affect your computer. It is just a Value Added feature added with HP computers so that when you connect any HP Printer you don't require to run the Installation process as the Computer will automatically configure with the printer.
As long as you have a seperate installation disc for the Printer (if any) you can uninstall the drivers ;)

You have photo processing software. I just bought an HP digital camera last night. It came with Photosmart Premier 6.5 and Photosmart Essential 1.9 software. Afer fooling around, I found out that the software was not needed to upload pictures into my PC. I uninstalled it. You should be able to do it safely, too.
