It really depends on what enzyme it is. Assuming you don't know that enzymes are simply catalysts in a chemical process, without them we would be screwed. It would be like trying to absorb a sandwich through your skin into your belly. Stomach enzymes missing=bad. Most other are pretty crucial too, be lucky with the fact that they aren't malfunctioning. One single enzyme, and it probably won't make a difference. I KIND of enzymes and there would be a problem. The substrate that that kind of enzyme worked on would not be converted to its product. The severity of this would depend on the kind of enzyme that was affected.

eg...if you lack the enzyme to digest milk...you're lactose intolerant, but that's just one example,,,you need to know specific enzyme to answer the question properly
