Like someone before me said, it has to do with chromosome number. In species that are too different, the egg and sperm cannot join because the genetic material is too different. However, different species that are very close can sometimes produce viable offspring. Horses have 64 chromosomes, and donkeys have 62, but they are close enough to mate and produce mules. Lions and tiger are successfully bred to produce ligers. It's possible that chimpanzees (chromosome number 48 compared with our 46), our genetically closest relatives, could mate with humans to make some kind of human-chimp chimera, but this is kind of a horrible idea and gets into a long discustion about bioethics.

We have 23 chromosomes. Each speice has a different amount of chromosomes. If a human were to mate with another animal and it had more chromosomes than us the "baby" would die.
