As many people have answered, the wings originated in Buffalo, New York -- I am a Buffalo native.

The legend goes that they were first made at the Anchor Bar in Buffalo when they ran out of regular chicken and all they had left were wings they had cut off the chickens. They then took the wings, deep fried them and mixed them in a spicy sauce -- they were delicious! Thus, the term "Buffalo wings." And, thus, the popularity of the Anchor Bar.

The Anchor Bar still serves them, and they are best on the eastcoast -- the westcoast tends to NOT fry the skin enough, and the skin, which is really the thing that makes the wings unique and tasty -- should be crispy. (So, don't judge Buffalo wings on the westcoast!)

And, yes, Frank's Hot Sauce (which you can now get nationwide) is the best sauce to use. It appears a bit "thin" at first, but it is not meant to be a sauce like a thick dipping sauce -- it is a hot, spicy coating for the wings, and the spices through the liquid sauce soak into the wings. A little known fact is that one should -- after they have deep fried the wings and then soaked them in the sauce -- put them into a hot OVEN then for about 5 minutes to bake the sauce in and to eliminate the "wet" feel of the sauce.

The sauce is hot and spicy, and that's why Buffalo chicken wings are generally served with blue cheese dressing and celery sticks to cool the mouth afterwards.

Enjoy those wings!

I first began to seriously notice Buffalo wings some years ago when I traveled a few times a year to the Buffalo, N.Y. area. Was talking to a gal in a bar there one night and mentioned the things. Turned out she worked in a place that specialized in them and here is what she said: "Damn wings . . . they ought to go back to throwin' them away!" I don't know what she was doing in that bar though . . . one of the things on its menuboard was something called an "Onion and Bologna Sandwich!" UGH!

I first ate buffalo wings on another night, when in another bar in Buffalo some gal invited me back to her place and wouldntyaknowit, the first thing she did when we got there was pull some Buffalo wings out of the freezer and cook them up for me. Funny all the memories 2 little words can bring back.

Anyway, that's why they're called "Buffalo" wings.
