Why is sheetrock a good material to make walls out of?

I mean, it is crumbly, shatters easily. And for the bonus, how is it made?

It's cheap, easily installed, relatively stable and provides flat smooth walls. It's made of compressed powered gypsum wrapped in a paper sleeve.
