IF you go to http://www.butterball.com they have a turkey calculator there that can figure out how large of a turkey and how much stuffing you need.
They say you need a 15 lb. turkey and 11.25 cups of stuffing.

You are supposed to have between 1-2 lbs of turkey per person that you are serving...
So 10-20 lbs should be good

I believe you estimate the servings based on a half pound per person. So if you are feeding 10 people then you would need a only a 5 pound turkey. But I would go with about a 10 to 12 pounder.

18-20 pounder should suffice, when you add all the trimmings it will be enough. If you want leftovers go with an over 20 pounder.
