I've set tile and stone for over 12 yrs and in occupied homes we always r&r (remove and replace) the appliances. Somtimes you can get lucky and only have to trim the face of the cabnet on the bottom, other times they have to come out and be modified. Same with doors.
When you pay a contractor to do the work you are charged by the square foot and that area isnt left out!

Yes it would go under the stove and fridge, but there shoudlnt be a problem with a slight difference in the height of the cabinets and the stove. How thick are the tiles that you're using? I wouldnt think 1/4 of an inch would make that much difference in where the fridge fits. Maybe if there is extra molding or decoration under the cabinet, you can remove that and leave the cabinet.

I think most fridge manufacturers prefer some airspace above the fridge to help allow for airflow around it. If the fridge is right up to the cabinet above it, you might want to raise it any way.

Also, if you don't lift the cabinet and you don't tile underneath it, the fridge will have to come up any way to get it out. Is there room to lift it that half inch that it will take?

If you want, maybe you could build a shallow wood ramp to help get the fridge up onto the tile.

It is not necessary if you plan on living there, if you plan to sell the home, then the extra effort is worth it.
If you choose not to, just get the tile as close or partial under the stove and fridge so that it appears to be under them.

How thick is the tile? if it's only 1/8th or so, you can put one row of pieces under the fridge...when you slide it out it will be easier to get the back up on the tile...

when I laid my kitchen and bathing room tiles i stumbled on the centre of the room and marked a + then interior the backside 2 corners of the + i placed my tiles and labored my way down. then once you have the centre tiles in place, you start up working outwards, so u have matching cuts at each and every factor on your kitchen. this is extremely confusing to do, yet properly worth it interior the top, as you finally finally end up with a symmetrical kitchen.

Both fridge and stove have adjustment screws to adjust the height. Just lower them and you are done.
