Love to say I was an American who bought a UK 360 cheap in England - LMAO!!
Moving to the states, will my lads 360 work over there? can I change the output from PAL to NSTC or whatever it is??

the bigger problem you will have is that you won't be able to purchase games in the USA and play it on your GB XBox360.
The XBox (and sony PS2/3, Gamecube, etc) are all region encoded. so the only games youc an play on them are the games bought at the same region as the device.
Otherwise, the device will work great in the USA.
