On Broadway my vote would have to go to Wicked.
On the West End my vote would go to Les Miserables for a musical and Rose Rage for a play.
The best performance I've seen in a show was Nathan Lane in The Producers - a simply amazing performance.

Across many years: South Pacific. Mary Martin was jerss wernnerfl.
Runners-up: Oklahoma!, High Button Shoes, Carousel, Call Me Madam, The King And I and My Fair Lady. Non Runners-up: Cats (misery), Starlight Express (childish nonsense, for kids), Joseph A.H.Amazing T.D. (amazing twaddle). All in the West End of London, not on Broadway.
Mary Martin: absolootly wernnerfl.

Unfortunately the only thing I've ever seen on Broadway specifically is Wicked. It was so awesome! I love Broadway. I wish I had the money to go more often.

Les Miserables, I loved the lighting effects in the sewer. Very dramatic. I also, love the story.
Aida good vocal selection.
Phantom did not live up to the expectation (or the build up it received) IN MY OPINION!
Rent's original cast was good, but now... BAD, Horrid even.
Wicked, agreed.... original cast was best.
as for Off Broadway, you should see a showing of Urinetown sometime!

M. Butterfly with Anthony Hopkins and BD Wong in London. Amazing acting. I really thought he was a she. Hopkins did an extraordinary job of playing the duped diplomat.

Fences with James Earl Jones
Death of a Salesman
West Side Story (Bernstein's score makes all other musicals purely infantile)
