I'm doing a Geometry test, and I was wondering if it is true that all triangles equal 180˚?

No.

Triangles on things like spheres can have angles greater than 180 degrees. There are also other surfaces where the opposite is true.

However on flat sheets of paper (technical word is plane) the sum of the angles in any triangle is equal to 180 degrees.
