Listen to early piano blues (1930's to 1950'). It is somewhat predicable, but that is the whole point.

I tried to play by ear, but, really, fingers work best.
When you listen to music, close your eyes and concentrate on all the different sounds/instruments and hear the individual notes. With practice then you begin to feel the music and it goes to your fingers finding the note on the keyboard. Close your eyes and play, let your fingers find the music. Then as you progress, you make the music in your mind and the fingers tell it to the keys. It hard to explain, it like making love, you just seem to know what to do. Good Luck!

"flavor?"

improv with other players and let your mistakes be the guide.
