Use a jigsaw.

okay, same guy, slightly different question... the string-and-marker idea is a good one to make yer curve. Depending on the thickness of your material, either a router or a jigsaw will work; the rule-of-thumb I learned was: if it was more than an inch thick, use the jigsaw.
Up to you whether you take this top off, or leave it in place and do yer work.

You need a jigsaw or a router to cut the edge then finish off with a formica trim.

make template out of ply and use a router watch the edges as router can chip worktop surface joiner for 20 years
