It's possible that the gauge is wrong.

Other possibilities are you're putting in a thermostat that is rated for a temperature that's too high for your vehicle. Make sure the thermostat you're installing is rated for the proper temperature of when it is suppose to open for your vehicle.

You may have trapped air and need to bleed the cooling system.

Gauge circuit could be screwed up, but are you sure the thermostat is installed in the right direction?

Could be what lethander said. On Subarus, the best way to bleed them is to get the front of the car up as high as possible, the way ramps would do it. Just find a little hill or something similar. Then let it run until it warms up, filling the radiator along the way.

is it a 2.2/2.5 engine? if so the cooling system needs burped... what happens is air gets trapped in the system and causes the overheating

a couple different things you can do:

leave the rad cap loose and let it idle for about a half hour

or my own usual fix drill a 1/8" hole in the thermostat that will allow tegh air and water to cycle thru and bleed itself out

When you say 'overheats' are you saying boiling over are are you referring to what the gage says? Gage could be wrong.
