Do an "Around the World" unit. Have students pull the names of different countries from a hat and research the traditional cuisine of that country. They can report back to the class and from there you can find easy recipes that you can adapt to the class size / length / resources. You could do different types of sushi (fish-less and/or brown rice are good variants), paella, mole (can be meat or veggie) and hand-made pasta with homemade sauce. If you want to narrow the focus even more, you could research what students eat for school lunches around the world and replicate those in your class.

Try researching Russian dishes. The cuisine is delicious and is not greatly discovered by americans. You can find a lot of dishes that will be unusual and at the same time will not use any ingredients that would freak your students out (like tongues, brains, eyeballs).
