You can only be compelled to give a deposition by a court. Not an arbitrator.

Generally not. But there are times when parties in arbitration can petition a court to order a deposition. It's rare, but it can happen.

Yes, if you are summoned or subpoenaed to give a deposition. A time, place and date will be on the paperwork. You will be sworn to tell the truth prior to the deposition. If you don't know answer to question(s), don't speculate, just state you do not know or do not remember.
