Alright, Erin, let's go into business.

Our restaurant will be called Mar de Cortes, and our specialty will be Mexican seafood.
The dish we will be famous for is Ceviche, which is a fish cocktail sort of like a shrimp cocktail with pickled whitefish.
Shrimp cocktails are also a big draw. We will serve several
different styles of fish, and each fish can be grilled, or served in Veracruz or Monterrey styles (which are different ways of fixing
the sauce).
In addition to our fish menu, we will serve a normal fare of tacos and enchiladas, with enchiladas suizas ( chicken enchiladas with green sauce) our specialty.
We also will make sopapillas, these are fluffy rolls eaten with honey, and will have unlimited iced tea.

On our fish menu we will have: perch, sea bass, shark, swordfish(in season), bonito, and yellow tail tuna.
Ceviche, homemade salsa, shrimp cocktails, enchiladas suizas, sopapillas, and fresh Mexican style fish.

Everybody come to Mar de Cortes!
How's that?
(By the way, the Sea of Cortes is the body of water between
Baja California and the Mexican mainland. I used to go fishing down there.

gastrónomo means gourmet, might be a good name. Paella is one of the national dishes of Spain and here are some other recipes:
