For what console?
PC= RCT's (roller coaster tycoon's) , Zoo tycoon, Cruise Ship tycoon, The settlers, Sim city, Restaurant tycoon, Monopoly tycoon, The Sims 1/2 maybe?
Xbox/Playstation = Theme Park world. Coaster tycoon.
Dont know any others for different consoles, as I prefer these type of games ont the PC. There is loads, research them using the net, just simply type in tycoon games.

roller coaster tycoon 3 is good on the PC. You can build buildings aswell as rollercoasters etc. you can customize everything and download lots of stuff. Others :
The Sims 2
Zoo Tycoon 2
Sim City 4
Age of Empires 3

Try the roller coaster tycoon series you can design and build you're own rides or use pre built ones

Keep a lookout for the game Spore.
You can design your creature, buildings, how you want your creature to live and etc.

I'm a fan of the Sims2 myself. even if you aren't into the Sim play, there are tons of building tools. Then you van upload your creations on their website exchange.
