The fish in sushi is not cooked at all. So if the fish in your sushi was undercooked it wasn't sushi.
You should know it is a risk to eat sushi in UK, because fish is frozen rather than completely fresh.
I like sushi a lot, and never had any reasons to complain. However, during summer I don't eat it at all, because it might be rotten.
I usually eat it at Wasabi, Tokyo dinner (near China Town), or Yo! Sushi (expensive and low portions)

Sushi IS NOT raw fish! Sushi is vinegared rice. If the rice was undercooked and you ate a fair amount it could cause a belly ache. Cooked rice is risky and should be kept well chilled and served or thrown away after no more than 24 hours.
Sashimi IS raw fish and sushi may be topped with raw fish or served with sashimi. Raw fish is also risky and should be kept well chilled and served or thrown away within 12 to 24 hours.

First things first, Sushi is not raw fish it means "with rice" usually applies to a small bite sized piece of food which can be topped or wrapped with cooked or raw fish, fresh veg or other meat, sometimes also including cheese or egg. Raw fish is reffered to as Sashimi, Pretty much any fish can be enjoyed raw but it must be fresh, I regurlaly eat sushi,sashimi both at restaurants and home made. If you wish to try sushi/sashimi its prob best at first to stick to Tuna which is quite mild in flavour, tastes nothing like the tinned stuff, also abalone or prawn, food poisoning from fish can be very nasty so please ensure all fish and ingriedients are fresh and ensure all premises visited appear clean. I'm guessing a little, but it's the rice that is more likely to have been the problem. Unless you took samples of your s**t and had them sent away etc...
Cold smoke salmon, tuna steak, depends on if you mean cold as in raw, or cold as in after cooking.
I would second the herring answer at the top :) try Ikea lots of types of herring in different sauces etc... Very nice.

I thought Sushi was served raw! You sure it was cooked? I think most fish is best served cooked and hot personally - but you could try herring

Sushi is never cooked... Its RAW
You should eat sushi at a sushi bar, never somewhere else because sushi is made by hand and some people just dont keep their hygiene.

for most of the answers above: i'm sure sushi isn't raw fish, it's the name for the type of preparation. not all sushi is raw or in fact fish! try smoked salmon with some cream cheese (as long as the fish is scottish).

Under cooked sushi? i was always under the impression that sushi isn't cooked at all?
But to answer your question i'd go for Rainbow trout with a nice creamy white wine and tarragon sauce.
