The albumin in the egg is a protein. It gels on heating and the transformation from liquid to solid makes it hard.

The protein in the egg coagulates. The same reason a raw piece of say chicken breast is soft and floppy, but is firm and sometimes chewy after cooking.

it's pretty obvious if you ask me. when it gets hot it can't help but get hard, oh yeah!!
