I'm in no way a yaoi/yuri fangirl (well, maybe the fanfics, but that's all!!) so basically I'll take anything that's not too off canon (storyline).
Hmm I think Sakura and Gaara make such a cute couple! *sparkly eyes* (Or maybe Sasuke too, but my friends think he's gay)
I don't want to list any FullMetal Alchemist ones (even though that's my FAVE anime) because I'm a fangirl of Edward. >.> I can't think of any good couples there besides Roy and Riza.
