The water heater is only about 2 years old, I don't understand why it sporadically goes out, Our gas is coming in fine, because our stove works well

I would guess the thermocouple is starting to go bad, it's just going to stop one of these days so change it now. Also check the drafts on windy days coming down the chimney, there should be a cover plate in front of the pilot but, it may have come off when the last person checked it. Also make sure you put the front cover back on correctly, this may be a problem.

Sometimes caused by air turbulence as a result of a windy day. If there is a strong gust outside, it would create a sudden suction or blow-by at the pilot. Sometimes a baffle needs to be mounted on the flue outside to muffle the affects of the wind. Otherwise, it may be a bad thermo-coupler at the control.

Maybe it's a thermostatically controlled electronic ignition? Does it come back on by itself when the water cools?

If not that, I'd suspect the thermocoupling has gone bad. It's a cheap job to have a Heating & Air guy come relace it.

there should be a removable shield in front of the flame to prevent drafts from blowing it out. Its about 4 inch by 4 inch. if you can see the flame from the front then its not protected.
