If you visit the Central Visayas and Northern Mindanao, try the Kinilaw, which is popular in this region. It is Philippines version of the Japanese Sushi. Raw fish is marinated with vinegar or coconut wine (tuba), added with local spices, lime and other ingriedients. Foreigners usually can not tolerate this type of food.

Adobo is like our national food. I think every island in the country has their own version of it. It can be cooked using pork, chicken or beef. My mom even has her own version - using hard-boiled eggs. But the most famous is the Pork and chicken combo. It's really good.

During summer (especially), Halo-halo is really popular.
