The ending kinda sucks...or more like it's unpolished. I've been told the manga is better and much longer...should i start over from one or pick up wherever the show left off?

Yes the ending of the episodes is pretty sad but the manga doesn't stop there. I think it is better to start over from the beggining from manga. You'll meet Puck who's a fairy but wasn't introduce in the anime. He'll be playing some important role afterwards and it might be useful to read in order to know where he comes from.

They probably picked about the best stopping point they could for the anime, if they didn't want to go multiple seasons. Personally, I loved the anime. It's what made me pick up the manga.
The manga contains a much longer and involved story. The anime covers many of the main points of the early story, and it contains the fact that Guts is left alive to get his revenge, but the manga pretty much answers all those questions you didn't get answered in the anime...and it's a great read.
