Depends on exactly what kind of mexican food you're looking for.
There is Tequilla Joe's in Downtown Disney, but it's not spectacular and it's overpriced.
There's a good, pretty authentic mexican food restaurant south on Harbor a little after Chapman Avenue on the right handside (across from Target and after the Red Robin and Outback.) It's called Los Sanchez, it can be pretty loud and hectic, but the food is good and well priced. You won't want to walk that far, but the Anaheim Resort has those free red "trolley" looking busses that run to the hotels in the parking lot, you could ride there and back for free.
Other than that, you could walk to Taco Bell or Del Taco for fake food, or there's a small taqueria just west of the convention center on Katella Avenue and Walnut.
...That's all that's in walking distance that i can think of.

There's a great Mexican Restaurant in Downtown Disney which is outside of Disneyland, it is called Tequila Joe's - they have yummy plantains (friend bananas).

Daniel M.hasn't been down Harbor Blvd. lately. Los Sanchez has
been leveled for months. Making way for more hotels I think. I
heard that they moved just a few blocks east on Chapman. But you were right they were the best.
