Wikipedia's website actually has an online book that talks about how to judge cattle. It goes into details about each and every part of the cow.

Mostly, cattle judging is done at 4-H competitions or county/state fairs where farmers will bring their steers to be evaluated.

Oftentimes, you can get a bid in the thousands of dollars for a pristine creature. Keep in mind, however, that its just going to become some REALLY good steak eventually!
