Our traditional Christmas goodie spread is as follows:

Pfefferneuse (sp) (aka Pepper-nuts: a German hard cookie flavored w/ coffee and anise, not everyone likes them though)
Coconut Macaroons
Peanut Turtles
Chocolate "Spiders" (Chow Mein Noodles and Chocolate Almond Bark)
Chex Mix
the Traditional Sugar cookie w/ sugar sprinkles
Peanut Butter Balls

YUM! I'm getting hungry just thinking about it! Some people make divinity, hard candy or fudge. Gingerbread Houses are always fun!

Host of many Christmas Cookie parties here - GO for the thumb print cookies or anything with Chocolate that is homemade!

Great recipe:

3/4 pound (3 sticks) unsalted butter, at room temperature
1 cup sugar
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon kosher salt
1 egg beaten with 1 tablespoon water, for egg wash
7 ounces sweetened flaked coconut
Raspberry and/or apricot jam

Preheat the oven to 350 degrees F.

In an electric mixer fitted with the paddle attachment, cream together the butter and sugar until they are just combined and then add the vanilla. Separately, sift together the flour and salt. With the mixer on low speed, add the flour mixture to the creamed butter and sugar. Mix until the dough starts to come together. Dump on a floured board and roll together into a flat disk. Wrap in plastic and chill for 30 minutes.

Roll the dough into 1 1/4-inch balls. (If you have a scale they should each weigh 1 ounce.) Dip each ball into the egg wash and then roll it in coconut. Place the balls on an ungreased cookie sheet and press a light indentation into the top of each with your finger. Drop 1/4 teaspoon of jam into each indentation. Bake for 20 to 25 minutes, until the coconut is a golden brown. Cool and serve.

Russian Tea, I make the mix and give for goodies every year.

Dipped Ritz. Make Ritz peanut butter crackers and dip in white chocolate, top with sprinkles, yummy! A good friend's daughter requested these to be served at her wedding! We just sprinkled them with her wedding color. For Christmas I use red or green.

Orange coconut balls. Made with graham crackers, crushed pecans, OJ concentrate, and powdered sugar. Roll in coconut.

Baked graham crackers. Like peanut brittle, but better and easier!

Gingerbread cookies. My husband bakes these with the grandkids and they decorate them
.
Peanut butter balls.

Chex mix. Although you can buy this now, it is so much better made from scratch.

Have fun baking! And eating!

Last year we made our neighbors a Foundue basket. We made jars of Chocolate Coconut Foundue and included dried bananas, apricots and apples, marshmallows, pretzels, potatoe chips, toasted pound cake cubes and roasted almonds....w/ directions on how to reheat and best wishes. Of course, you can consider includomg whole (uncut) bananas, apples and other fresh fruit as well). And if you're feeling very generous...you can also include a little dessert fondue pot:

note: you can find dessert Fondue pots around $10-$15 at your local outlet mall that has a kitchen store.

Here's the recipe I used (BTW 1) plenty of Chocolate Fondue recipes on Epicurious.com to choose from and 2) this Fondue freezes very well!).

CHOCOLATE AND COCONUT CREAM FONDUE

Biscotti would be great for dipping, too.

1 15-ounce can sweetened cream of coconut (such as Coco López)
12 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped
1/4 cup whipping cream
1/4 teaspoon coconut extract

Assorted fresh fruit (such as whole strawberries, 1-inch-thick slices banana, 1-inch cubes peeled cored pineapple, and tangerine segments)

Combine sweetened cream of coconut and 12 ounces chocolate in heavy large saucepan. Stir mixture over very low heat until chocolate melts and mixture is smooth. Stir in whipping cream and extract. (Fondue can be prepared 8 hours ahead. Cover; store at room temperature. Stir over low heat to rewarm before serving.)

Transfer mixture to fondue pot. Place over candle or canned heat burner. Serve with fruit for dipping.

ginger bread houses, i make about a dozen every year and give them to the kids as treats; use gram crackers as the houses and use white icing to hold them together, and use all kinds of candy to make the windows etc. just have fun with it.
