we have a white goldfish with a big red blob-brain-looking thing on its head. the fish is like 2 years old. now the red blob is turning white and shrinking? is this normal? we also have two black fish with eyes that pop out of their heads. they are turning orange from the belly up. is there something wrong with them or is it natural?

Don't worry they're fine.
I have this white Goldfish that started having blackspot, it is fine. Then a orange and black who lost all the black, it is fine.

Shrinking is not right, is it eating?

The fading of the crown of the goldfish is okay, but if it's shrinking it might be a sign of problem. But do note that, it might be the case that the fish is growing but the crown is not, therefore it'll look like it's shrinking :) thats fine.

Edited: Ignore the lower portion, I didn't realize that the black fish you were referring to was a moor. I though it was something else.

The poping of eye could be symptom of a disease. It could be pop eye disease (Exophthalmia) or dropsy. Look up images in the web of these disease and see if it's the same. Seek medical help if it does.

About the goldfish, I don't really know. You'd probably be better off talking to a fish specialist. But with the black fish, I had 3 that did the exact same thing. Someone told me that it was because they were in the same tank with my goldfish and they grow and change to match their surroundings. So if they are in the same tank as your goldfish, that's probably why. Good luck with the blob.

the goldfish with the eyes popping is just maturing nicely and that is why is changing colors, and the oranda ( brain popping looking) is just growing and it might look like its head is shrinking

It is very likely normal, however I would check them in to see a vet just in case.
