God said to put the blood of the lamb on the doorpost on the 14th day of the first month. The following day, the 15th day of the month, is the first feast day of Unleavened Bread, which is now celebrated as Passover by the Jews. Why did this day change and when?

According to Lev. 23:5, "the 14th day is the Lord's Passover. And the 15th is the feast of unleavened bread, eating unleavened bread for 7 days."

It was never changed. In order to understand this you have to know first that the Jewish day starts from when the sun sets. in The 14th (before sunset) they put the blood on their doors and in the midnight G-d killed all the first borns (already the 15th because it's after sunset). when the egypcian found out what happened they begged the jews to leave, the jews were in such a hurry to leave that they didn't have time for their bread to raise up properly and that's why we eat the unleavened bread.

It didn't really change. We are supposed to sacrifice on the 14th, and eat the lamb that night, the 15th (the day starts at nightfall). The passover name is where the "passover" comes from, on the 14th. However, colloquial (Since at least 200 CE) has been to not distinguish between them, and to call the 15th and on "Passover", because there is no observance of the 14th without a Temple.

Passover, as with other Jewish holidays, is designated by the Jewish calendar, which is slightly different from the calendar we use. That's why the dates change from year to year.
