The anesthesia can make you sick to your stomach. If you have food in your stomach, you could vomit and aspirate (inhale the vomit), causing major problems.

When you are given the aneathesia your muscles relax. If you burp up food or liquid or if you vomit, you would then aspirate that food or liquid into your lungs, hence developing aspiration pneumonia.

I believe it's so you don't vomit reflexively during anasthesia.
