Dr. Doom because he understands magic, tremendous mental control, his armor is the most soficated and he is highly intelligent so jedi wouldnt have a chance

Peak level Jedi....?
Body honed to perfection, Mind highly trained and resistant, and powerful force powers...? That is a hard enemy to defeat. But I'd put my money on Beta Ray Bill. (I know he's cropped up a bunch of times recently on YA! but he is a fave of mine) .
He has alot of things going for him that counteract or overpower a Jedi's abilities. First is sheer strength, durability and other physical abilities. These counter a Jedi's physical training. Bill has few attacks that assault a person's mind so there is no need to counter the Jedi's mental defenses. Now you have the Jedi's force powers... which either physically of mentally effect a foe. Beta Ray Bill has the Physical durability and resistances of a GOD. So he could weather the physical assaults. But now, we come to the best loved of the Jedi's powers. The Jedi mind trick (and other such mind effecting abilities). I don't think that the Jedi could use the mind trick on Bill. This is because Beta Ray Bill is a cybernetic creature. It would be like using the mind trick on a droid.... (can they do that?) Now factor in the fact that Bill has all the storm wielding powers of Thor, and Beta Ray Bill would shatter the Jedi's skull with an awesome blow from his hammer, Strombreaker!

Green Lantern. Much greater range (can strike the jedi before the jedi can sense him) greater range of effects (the ring can do more things that the force can) and it can shield him from psionic assaults. A lightsaber just isn't in the same weight class.

Pfeh - most people have no idea - but I do. The Molecule Man could defeat a Jedi at his best. And yes, I know - while the Molecule Man started out as a villain, he did become a hero at the end of the Secret Wars. He could take out a Jedi just by making every molecule in their body implode, explode, or just vanish in a burst of energy.
