Giants stadium is the actual name of the stadium only when the Giants are home, per their 30 year lease with the owner of the stadium. The owner of the stadium, the New Jersey Sports and Exposition Authority, allows the Jets to "rename" the stadium for their home games, since they obviously do not want to play in "Giants Stadium".
It got the name the Meadowlands because it's part of the Meadowlands complex - that includes the Meadowlands Racetrack and the Continental Airlines Arean.
Prior to 1984, the Jets played their home games at Shea Stadium. When their lease expired, they moved to "Giants Stadium" but the naming rights were a part of the Giants lease with the NJ Sports and Exposition Authority. Therefore, they struck an agreement with the Jets that would allow the Jets to call the stadium the Meadowlands - since the complex that included the above mentioned stadiums was already named as such - but only during the Jets' home games. This is why the Jets often cover any mention of the Giants during their home games.
