What processor is good for gaming? - The Core 2 Duo models are the best there is right now, hands down. Which one you should get depends on your budget. Get the best you can afford, (x6800 is a grand) but know that the e6600 at $320 is a GREAT processor.

And are AMD Athlon 64 FX series dual-core or a single core processor? - Both. FX-55 and FX-57 are single core. FX-60 and FX- 62 are dual core.

The link below is a comparison of the best there is overclocked, but they also have benchmarks for the stock processors too.

The FX chips are just plain faster, and most games out now do not take full advantage of dual core technology. There is a dual core FX chip though...The AMD Athlon FX-60. Quite expensive though...

Some of the FX series are dual core, the 60 and 62. The best out right now are the Core 2 Duos, they are faster than the AMDs right now.

With all of the new changes in technology taking place, you'll appreciate the dual-core processor. It, along with all of the new "Sata" hard drives and "Sata" cables, info is processed soooooo much quicker. Todays online video games are also temendously demanding (so as not to allow for freezing up) so you'd be a lot happier with going that route if you can. Hope this helps. Great question by the way.
