Believe it or not it works best if you watch it in the order it was created. First the vintage movies: Episode 4 A new hope, Episode 5 The empire strikes back, and finally Episode 6 The return of the jedi. Then on to the prequels: Episode 1 the phantom menace, Episode 2 Attack of the clones and the third installment of Episode 3 Revenge of the sith. I saw an interview with Harrison Ford back in '77 talking about how Lucas wanted to later go back and make the chapters before his original creation. If you watch it any other way, it doesn't work as well.

Start with episode 4, if you don't know anything about the story--Obi Wan will explain it all to you, and what he leaves out Yoda will fill in in episode 5.
Starting with episode 1 is the chronological order, but you are starting with the crappiest movie of the six. This movie has jedi who are ordinary people and hold office in government--not the rare mysterious dying religion (that has to be explained to Luke, and the viewers) it is in episode 4. It involves some political maneuvering that is boring if you aren't thinking 'so, that's how they went from republic to empire'. Also in episode 1 you'll see people sensing things with the force, using telekinisis, and generally behaving like supermen without understanding exactly who they are or how they do it.
If Lucas had started with episode 1, I'm not sure there would have been an episode 2--it is really only interesting when you know more about the world he created, and there is so much foreshadowing in the movie that assumes you know what's coming in 4, 5, and 6.

I don't really think there's a right or a wrong way
I like to watch 1(FF'ing through the pod race) through 6
but then I'm often dissapointed with the special effects of 4 and five but liven back up when I see the Ewoks in 6
sometimes I just watch Jedi for the Ewok factor
other times I watch them in order of favorite 6,3,2,5 and skip 1 & 4 because they bore me
I guess it all comes down to preference
do you read books from beggining to end?
or do you read the last chapter first to see how things turn out?

Even though Episodes 4, 5 and 6 were made in the late 70s and early 80s, you should watch them in order from Episode 1 through Episode 6.
Stephen Spielburg (sp?) made Ep. 4 first becasue he did not feel that the Annaken (sp?) character in Ep. 1 was interesting enough. So, he went with Luke Skywalker in Ep. 4 and made 4 - 6 first.

I think it would be better to watch them in chronological order so you could see the history behind Anakin and him turning towards the dark side and ultimately becoming Darth Vader.

I think the orginal order in which they were released. The reason being there are mysteries - how did Anakin lose his arm? - When's it gonna happen?
And the whole "Luke, I am your father" - it loses it's surprise if you already know.
