Depending on the type it is either supposed to make you more 'in the mood' for physical love, or to stimulate the parts that need to be stimulated.
When given/taken by mutual consent in a romantic setting then I think that most of the effect is placebo. For instance two people who happen to like oysters feeding them to each other at a candle-lit dinner will have the desired effect just by the power of suggestion.
Others work by fairly simple chemical effects. Menthol compounds applied to sensitive parts of the anatomy increase blood flow, both drawing the person's attention to that part and increasing their sensitivity. So the aphrodesiac acts like arousal itself.
Others work as irritants. 'Spanish fly' was long used in this way - and I imagine still is in some places. It works as an irritant on the urinary tract, and a consequence of this is to attract the person's attention 'downward' and to increase blood flow. It gives the person an itch they can't scratch, and if they are already sexually aware they will unconsciously mistake the sensation for being horny.
(Too much of the irritant type of aphrodesiac is very painful.)

it's supposed to get u sexually aroused.. although, if what u saw was in reference to food, i personally think that most of it is bullsh*t. i fail to see how something like eating oysters could turn anyone on... i would be too busy throwing up to be in the mood for naughtiness !
