Its always Fresh Mozzarella,
Like I just went for pizza and a guy asked for the slice with the Fresh Mozzarella.
What other type is there besides stale?

I couldn't agree with you more! They're just trying to make it sound better - actually, I hate mozzarella cheese - it has absolutely no flavor. Give me bleu cheese or feta anyday!!!!

Looks a little different than the "square block" or shredded version we often see in the grocery stores. If you can find fresh mozzarella in a regular grocery store it will probably be packed in a liquid (whey) that will need to be drained off before using. At least, that's how I find it here in the stores.

Fresh mozzarella is a softer version of what we commonly know as mozzarella cheese. It's made of whole milk, not skim or reduced fat milk usually. It can be made from cow's milk or the milk of the water buffalo. It's often more creamy than the low moisture mozzarella found in the stores. It melts completely different, too. Fresh mozzarella when used on a pizza for instance is often laid out in slices on the crust, not handfuls of shredded cheese and it will appear a lot more white than the shredded mozzarella used on pizzas normally.

Go to the grocery store and check it out........yes there are many different types of mozzarella......fresh is usually the most moist.....sometimes kept in a brine. It tends not to be as salty and does not melt as well as a drier mozzarella. Maybe the internet can give you some info and pictures. Try Stella foods or Precious foods.

fresh mozarella is not as pastuerized as the kind that you will find in a package...such as Kraft. It tastes a little better and melts a whole lot nicer than your run if the mill shredded mozz. It is rolled by hand in hot water...a diffucult process, but less pastuerizing than most name brands.

LOL!!! Maybe they mean the bagged kind or the big round ball of it (the latter being the fresh)!!
