Well there's the MC Hammer/Tupac collaboration...but that actually happened. It just wasn't ever released.
However, I would like to see:
50 Cent & Pete Doherty
William Hung sings Elliot Smith
They Might Be Giants/Cannibal Corpse split CD
Radiohead's "OK Computer" Remixed by Diddy
And Kanye West w/ the Gallagher Brothers, in a duel of over-inflated egos.

You want to be carefull with this because you might give some people ideas. There is already a bluegrass tribute to Metallica, and The Fabulous Bud E Love has been butchering metal tunes for years.
However I would like to see Motorhead do a Hank Williams tribute album.
