Like, if I get a 5.7L 350 V8 bored out because I am rebuilding it, in lieu of getting a remanufactured engine block, will my bored out block become a 354 5.9L?

yes,if you increase bore you increase displacement

Depends on how much you bore out. But in general, you will get more displacement. Obviously, you need to make sure the new pistons and rings will match your new bore.

you wont take out that much material,and 5.9 is closer to 400 cu in
you could build a stroker,383,use crank and rods from 400,google it for all the details
