I think the most important thing is the lyrics, not the type of music. How about this collection from Shania Twain..You are Still the One, From this moment on, You've got a way. Or you can have a sense of humour and try Fat Bottom girls from Queen ;) Depending if boybands annoy her, but the lyrics matter. Boyzone- I love the way you love me, No matter what, When you say nothing at all. Some Soul-Jackie Wilson- I get the sweetest feeling. Boys 2 Men- I'll make love to u. Ella Fitzgerald- Embraceable You, The very thought of you. Aerosmith- I don't want to miss a thing. Billy Joel- Just the Way you are. And if I am away from her for a long time, if I am out on business, Natalie Imbruglia - Counting Down the Days

Anything you can strip to. Any not keep a straight face.
If you can make her laugh, and feel at ease, you will win her heart.

P.S. If you prefer serious classic romance, I would go with poetry.
Either read to her, or typeset for her in an elegant picture frame.

Some of my favorite sources of quotations are Kahlil Gibran's The Prophet and Elizabeth Barrett Browning's Sonnets. You can also find illustrated books of quotes on love from Shakespeare (I found this book at the drugstore in the greeting card section), and for $5-6 there is a mini-book called "True Love" I found with classic paintings and quotations from famous authors throughout history on love and romance. This book is so small it can be given with flowers or some other thoughtful gift.

Picking the wrong music can be disastrous, but with poetry you can rarely go wrong, especially when you personally pick something out for her yourself from the heart.

P.P.S. If I had to pick a song it would be "More than Words" by Extreme.

The Stylistics. They were a black group in the 1970's. Their music is so romantic. You could go to HMV or Virgin record stores and they would play you a couple of tracks. Your girlfriend would love it.
Some of the titles of their songs:

Betcha By Golly Wow
I'm Stone In Love With You
You Make Me Feel Brand New
Let's Put It All Together
Can't Give You Anything (but my love)
Can't Help Falling In Love

Good luck to you and your girl

I would find out what kind of music she was into first because that makes a big difference. What might be romantic to one might be a total turn off to another.
