Paul McCartney's "Yesterday" is the most covered song in popular music history, with over three thousand different versions.[citation needed] The Beatles' "Come Together" has also been covered numerous times. George Gershwin's "Summertime" (from Porgy and Bess) has had an estimated 2,600 versions recorded, and no list would be complete without Irving Berlin's "White Christmas" (from the film Holiday Inn).

I would guess Happy Birthday ... as for who sang it originally, I am not sure. Millions of people every day cant be wrong. : )
Ok ... on looking, was Mildred and Patty Hill 1893.
Methinks this may not be the answer you were really looking for though.

As recordings go, I was under the impression it was Over the Rainbow from the Wizard of Oz. Judy Garland. Written by Harold Arlen ? I think
As far as most sung, I reckon the Chinese national anthem would give Happy Birthday a pretty good run for it's money.
